Mousse Hunt
At fourteen, I started collecting my favourite recipes in an old agenda my father had given me. The 3rd recipe in my recipe inventory was chocolate mousse. Chocolate mousse is, without a doubt, my absolute fave dessert to make for family and mates. What’s not to like about it? It adds class to any event, desires no cooking, aside from liquefying the dark chocolate, and most importantly, everybody likes it!
Since beginning that recipe collection such a long time ago, I have experimented with many different ways to make chocolate mousse. When I discovered Pierre Herm’s chocolate mousse recently, I adopted it right away and forgot my previous recipes. Pierre Herm is a famous French pastry cook known by some as “the Picasso of pastry.” What makes his chocolate mousse recipe fantastic is its light texture and lower calories. Most recipes use heavy cream or butter. It’s so straightforward to make and can be prepared up to 2 days ahead.
It keeps very well in the chiller. All you do is chop and melt the chocolate, mix it with boiled milk and egg yolk. Whip whites of the eggs till they reach a light texture. Add sugar in a nice and slow stream till the egg whites are firm and glossy. Add third of the whites of the eggs at a time, whisking the mixture to a light texture. Fastidiously fold in the leftover whipped whites of the eggs. Decant into a big bowl or into small individual serving bowls. Let the mousse chill for about 2 hours and then serve with any toppings you like!
As the recipe only has a few ingredients, you can really spend and buy a quality chocolate. There are many types of chocolate available to use at the supermarket, like Ghirardelli and Lindt, or it is possible to get actually fancy and head to your nearest chocolatier. The most simple choice is by using Ghirardelli cacao bittersweet chocolate. It is extremely succulent, both by itself and in this mousse.
Don’t make mousse again unless it is with this recipe! It is simply the best, take it from me. Simply set a date, get in the kitchen, and treat yourself and your friends to this scrumptious dessert!
