Crystal Sugar
Which is bigger in terms of size as crystals, sugar or salt?
My brother and I were arguing over whether the size of sugar crystals are bigger than salt (crystals?). I thought that sugar was bigger cuz of its molecular formation, but my brother insists that salt was bigger cuz his teacher said so…so please help!
Sugar (Sucrose) forms monoclinic sphenoidal (class 2) crystals. This is a fancy way of saying that the crystals have a very complex shape. Because of this shape, the crystals tend to remain small and even get in the way of other crystals while they are growing.
Salt (Sodium chloride), on the other-hand, forms simple crystalline cubes. These are easy to grow huge in size.
In terms of which usually has the bigger size crystals (just as it comes from the packages sold in grocery stores), I checked this out a number of years ago and found that salt crystals tended to be larger and much more uniform than cane sugar crystals. I used a microscope with a measuring grid, but you can usually see the difference with a magnifying glass or even the naked eye.
