Cup Mint
Watermelon salad recipe?
I just watched on the cooking channel, Neelys made watermelon salad.
* 2 tablespoons white wine vinegar
* 1 lime, zested and juiced
* 1/4 cup extra-virgin olive oil
* 1 red onion, thinly sliced
* 4 cups seeded watermelon chunks
* 1 cup crumbled feta cheese
* 1/4 cup mint chiffonade
* 2 cups baby arugula
I feel like it’d be pretty easy to find these ingredients except mint..Is there anything to sub it?
Or any better recipe for this? I think to add olives?
yeah but I think mint will give it a kick I don’t know anything about spices n herbs.
Fresh basil is nice, Coriander/cilantro to, fresh Oregano, I made it years ago with Yellow WM and feta can be salty, if you like fresh mozzarella is nice or even diced white cheddar.
