How do you make a tea concentrate like cafeterias used to do?
I remember in the 1950′s and 1960′s that if you asked for tea at the cafeteria they would pour off some tea concentrate from a huge teapot into your one or two cup teapot and fill it with hot water and it tasted awesome like that real english pot of tea taste. I have been craving it lately and wondered if anyone knows anything about this old and lost art??
I am not sure, but my guess is that they probably did some tea concentrate by reduction.
Perhaps by boiling a good qty of water with a good concentration of tea leaves and let it reduce until half the volume or a bit less. Probably they added the sugar during the reduction too.
This is a good way to make a concentrate anyways, if it is not what you are looking for, it is worth to give it a try and see if it works the same.
PS: after answering, I found the following too which sounds interesting
Rapid boil 1 1/2 quarts cold water.
Remove the water from heat and immediately add 1/4 pound loose tea.
Stir to immerse the leaves.
Cover.
Let stand for 5 minutes. Strain into a teapot until ready to use.
Pour two tablespoons of tea concentrate into a cup and fill with hot water for a hot tea fix.
Pour 3 tablespoons of tea concentrate for iced tea to allow for the ice melting.
Double the recipe for a larger crowd.
