I am looking for a sauerkraut recipe that is sweet and sour. It is served at a Bohemian Cafe in Omaha Nebras
I am looking for a sauekraut recipe. It is sweet and saur. The kraut is not red. The sauce on it is clear. It is served with sliced of delicious dumplings. Which I would love to have the recipe for too. It is Czech/Bohemian.
CZECH Sweet and Sour Kraut
10 servings
ingredients
1 large onion, halved lengthwise and thinly sliced crosswise (2 cups)
2 large garlic cloves, finely chopped
3 tablespoons vegetable oil
1 teaspoon cumin seeds, toasted
10 whole allspice, crushed
1/2 cup sugar
juice of 1 large lemon
1 1/2 teaspoons salt
1/4 teaspoon black pepper
3 lb packaged sauerkraut, rinsed well and drained
preparation
Cook onion and garlic in oil in a 3 1/2- to 4-quart heavy saucepan over moderately low heat, stirring occasionally (stir more frequently toward end of cooking), until golden brown, about 30 minutes. Increase heat to moderate, then add cumin and allspice and cook, stirring, 30 seconds. Add the sugar, salt and pepper and simmer, stirring occasionally for 10 minutes. Stir in sauerkraut and bring to a boil, then reduce heat and simmer, partially covered, stirring occasionally, until most of liquid is absorbed, about 30 minutes. Add the lemon juice and stir through. Garnish and serve.
Cooks’ note:
Sauerkraut can be cooked upto 2 days ahead and cooled, uncovered, then chilled, covered. Reheat with 1/2 cup water, covered, over low heat.

Czech Dumplings
Ingredients:
2 lbs peeled potatoes
salt and pepper to taste
2 eggs
3 cups all purpose flour
METHOD:
Grate raw potatoes and drain. Add salt, eggs, and flour to grated potatoes and mix well (mixture will be fairly solid).
Form dumplings into balls (desired size about 20-25 good sized dumplings) and drop into boiling water. Allow to cook for 8-10 minutes making sure they do not stick to bottom of pan. Remove dumplings with a skimmer and set aside until needed.
