Does the structure of the crystal lattice of ice-cream differ from that of ice?

I’ve observed the patterns ice-cream makes and that of cracked ice, and I see a similarity, but I’m not sure. Do the water molecules separate and form the lattice, with the rest around/within it? Or is it something else?

I just randomly thought of this as I was picking at my bowl of Dutch chocolate flavoured ice-cream…

The liquid found in ice cream (provided it is made from real milk) comes from milk fats while the liquid found in cracked ice (or ice shavings) comes from water (H2O).

Milk fats are predominantly a low viscosity oil base liquid which is very different from water. Ice cream patterns differ from that of cracked ice because the molecular structure of both liquids before freezing is different: one being an oil base and the other being that of H2O.
