How You Can Make Delicious Coconut Bread And A Vintage Cocoanut Creme Date Pie
I’ve an in depth collection of very previous cookbooks and recipe clippings, lots of them going again to World Warfare II. I love outdated-trend recipes and infrequently learn these old cookbooks as one would a novel. I usually chuckle while reading them due to the wording or spelling. Such is the case of the next “Cocoanut” Date Pie recipe. At first I assumed it was a mistake within the recipe title. But as I read further, I realized this was how somebody spelled the word. So don’t get upset with me; I like presenting these vintage recipes of their authentic form. I believe you get pleasure from seeing them that approach, too. But please do not misunderstand. There may be NO cocoa or chocolate in this pie! Another thing I like is coconut, so this column combines {two} of my favorite things. Both the Cocoanut Creme Date Pie and the Coconut Bread are from my assortment of classic recipes. I hope you will take pleasure in them as a lot as I do and as a lot as the unique homeowners did. I hate to see these outdated recipes forgotten and our younger era by no means have a chance to enjoy some really good old-vogue food.
COCOANUT CREME DATE PIE
It was prompt it is a good pie “As winter fades into history and spring comes breezing in.” So I assumed this may be the proper time to post it.
3 tbls. sugar
1/4 cup cornstarch
1/four tsp. salt
2 cups milk
2 egg yolks, slightly crushed
1 1/three cups tender-thin flaked cocoanut
1 1/2 tsp. vanilla
1 tbls. butter
2 egg whites
1/4 cup sugar
1 cup dates, thinly sliced and sprinkled with: 2 tbls. lemon juice
1 baked 9-inch pie shell
Combine the 3 tbls. sugar, cornstarch, and salt within the prime of double boiler. Add milk and egg yolks, stirring till smooth. Then add 1 cup of the cocoanut. Cook over boiling water 5 minutes, or until thickened, stirring constantly. Cover and cook dinner 10 minutes longer. Remove from the heat and stir in vanilla and butter. Beat egg whites until foamy; add 1/four cup sugar regularly, and beat until stiff. Fold in scorching mixture. Cool 5 minutes. Fold in dates. Pour filling into pie shell and sprinkle with remaining cocoanut. Chill till set.
Previous-Style Coconut Bread
This is an outdated Texas recipe.
2 1/four cups all-purpose flour
1 cup sugar
1 tbsp + 1 tsp baking powder
1 tsp salt
1 1/four cups shredded coconut, toasted and cooled
1 half of cups milk
1 egg, lightly crushed
2 tbsp peanut oil*
1 tsp coconut extract
Preheat oven to 350 degrees. Frivolously grease a 9-inch loaf baking pan.
Sift the flour, sugar, baking powder, and salt into a medium mixing bowl. Add the toasted coconut and mix well. Mix the milk, egg, oil, and coconut extract in another bowl; mix collectively well. Add the milk combination to the flour combination, unexpectedly, and stir briefly simply till blended. Don’t over mix.
Pour the batter into the prepared pan. Bake at 350 levels for about 1 hour or until a wooden toothpick inserted in the center comes out clean. Invert from the pan and allow cool to room temperature earlier than slicing.
